Still Alive!

So...I got a little busy over the last week or so. Since I last posted, I flew to St. Louis, hung out with my college girlfriends, attended the wedding of one of said girlfriends, flew to Denver, and have been doing lots of fun stuff with friends and family. I'll try to explain more details in posts over the next few days, when I have a chance to add some pictures.

Today, Shawn and I went out to lunch with our friends Mat and Abby. Mat was one of the groomsmen in our wedding, and he and Shawn have played rugby together for years. Mat and Abby are the same couple that I did the Stomp to Romp Out Breast Cancer with back in March.

They suggested a restaurant that's relatively new to Denver, called D Bar Desserts. Here's the link to the restaurant's website. You should definitely take the time to look around the website, looking at all the yummy food! It's actually primarily a dessert and wine bar, but obviously, they do also serve lunch and dinner. For my lunch today, I had baked mac n cheese. I normally don't like homemade macaroni and cheese, but this was wonderful!! I didn't take this picture (I found it at milehigheater.com), but this is what I had:

For dessert, Shawn and I split the "Cake and Shake." It's a big piece of triple layer chocolate cake with chocolate icing, and a mini milkshake (we chose chocolate...should've gone with vanilla). It was awesome! Again, we didn't take this picture...I found it on flickr.

Everything that we had today was so good! And it should be, considering that the restaurant is owned by none other than Keegan Gerhard, of the Food Network! He was actually there today, baking and running the restaurant. He actually brought out Mat and Abby's food for them. It was a little surreal seeing a chef from TV working in the restaurant where we were eating. If you're not familiar with him, you can find his bio on the restaurant's website. Okay...maybe not

Towards the end of the day on Wednesday, Shawn let me know that the relocation company will be calling me. The first step in the process will be having a guy come over to do an estimate. I'm not exactly sure what this is an estimate of, since we're not paying for it. An estimate of how much space our stuff will take up in their truck? How much time it will take them to do it? Anyways, my impression is that the actual move will be scheduled after the guy comes to do the estimate. Shawn was told that the relocation company would call me within 48 hours. Considering how everything else has gone in this moving process, why am I not at all surprised that I didn't hear from them on Thursday?

Therefore...I'm assuming that we're not moving this weekend. :) At this point, I'm hoping for next weekend, which means we will have to miss the wedding in Texas we were supposed to be going to. I'm bummed about that...it would've been a lot of fun.

I did spend some more time packing today, although I'm lacking the motivation now to really hurry. The bulk of our stuff is packed, though. I mainly have our clothes and part of the kitchen left. I also went over to the school to have lunch with some of my former coworkers. It's always nice going there...people seem genuinely happy to see me, which makes me feel loved. :) Then tonight, I went downtown and had dinner with Shawn's mom. We went to a place in Cherry Creek that serves nothing but crepes, and it was really good! I had the "Poulet au Gratin" crepe, which is diced chicken with wild mushrooms in a white wine cream sauce with ementhaler cheese. And for those of you who know my picky eating habits well (Lis), yes...I actually ate it and enjoyed it...even the mushrooms! (Until, of course, I noticed that I was about to eat a mushroom, at which point I had to shove it aside. But if I didn't pay attention to a particular forkful and it contained a mushroom, I ate it.)

I was able to upload some pictures from Shawn's camera this afternoon, but considering that it's now after midnight, I think I'll wait until tomorrow to post any of them. (Sorry, Court.)

Our Sunday

On Sunday, Shawn and I had a few things planned for ourselves. Then we found out that Jarid and Sarah were free all day, so we agreed to spend most of the day with them. After going to Mass, Shawn and I first stopped at the mall to check out cell phones plans. We think we know what we're going to go with, but we didn't actually get new phones or sign up for a new plan. Maybe next weekend.

The main highlight of the day was supposed to be the Denver Art Museum. An exhibit has been there since February that I've been wanting to see. It's the "Inspiring Impressionism" exhibit, and it closes in Denver this next weekend. We weren't able to purchase our tickets online because we're out of printer ink (and it had to be "print at home"...no will call option). We met Jarid and Sarah in the parking garage and headed inside. However, we were informed that the exhibit was sold out for the rest of the day (they only allow a limited number of people inside at every admission time).

Since we were already downtown, we agreed to go to REI next. I needed to pick up a pair of shoes that I had ordered online and that arrived there last week. Shawn wanted a new backpack. He ended up getting this one (Osprey Switch 26) basically for free using his 2007 REI dividend...it's great being a member of a co-op!Since we missed out on the art exhibit, I had the idea to go to the Downtown Aquarium. I'd never been there before, and Shawn hadn't been there since it had been remodeled. It was really cool! Not only did they have lots of different fish, but the whole building has a cool design. I'm always amazed to see just how many different creatures live underwater on our planet! So many different colors, patterns, body structures.After the Aquarium, Shawn and I took Jarid and Sarah out to dinner at the Squealing Pig, a really good Irish restaurant. It was Sarah's graduation dinner, and we all ate way more than we should have. My favorite dish there is the Shepherd's Pie! After dinner, Sarah and I walked a block away to get gelato......always save room for gelato! :)
After dinner, we went back to their house to play the Wii for a couple hours. And that was our jam-packed Sunday!!

(P.S.- Only 6 more days of school for me!!)
